Bigos
(traditional Polish dish of sauerkraut)

Ingredients:

1.5 kg of sauerkraut 
2 onions, finely chopped 
2 tablespoons of oil 
1 jess ordinary sausage, sliced 
250 g boneless beef, diced 
250 g veal (or pork shoulder), diced 
100 g bacon, diced 
150 ml red wine 
3 tablespoons tomato paste (optional) 
1/2 handful of dried mushrooms 
1/2 handful of prunes 
2-3 bay leaves 
3-5 seeds of allspice 
1 tablespoon cumin 
1 teaspoon marjoram 
salt and pepper to taste 

Serves: 6

A method of preparing:

1. cabbage, rinse under running water if it is very acidic.
2. Squeeze the excess of juice and chop.
3. Put a large pot and pour boiling water, add plums, bay leaves and allspice.
4. Simmer until softened (approx. 50 minutes). In the meantime, pour boiling water over the dried mushrooms in a small pot.
5. Set aside.
6. Fry the onion is soft to.
7. fried onions add the sausages and fry in browned. In a separate pot boil approx. Liter of water.
8. boiling water add beef, veal (or paddle) and bacon.
9. Cook for about 20 minutes, then drain the meat. When the cabbage is already soft, add the mushrooms (drained and cut into small pieces), meat and onions with sausage.
10. Simmer uncovered for 20 minutes. If there is too much water, it should be cast.
11. Add the red wine and cook for another 15 minutes.
12. Season with marjoram, cumin, salt and pepper.
13. Add the tomato paste (optional) and heat the whole stirring.

If the stew is too dry, water the water the mushrooms.

(Cabbage soup)

Ingredients:

3 liters of vegetable broth
1/2 kg of sauerkraut
2 large carrots
1 large parsley
1 small onion, half a small celery
200 g smoked bacon
1/2 teaspoon cumin
1/2 teaspoon marjoram
4 medium potatoes
3 grains of allspice
2 bay leaves
3 tablespoons tomato puree
salt and pepper

A method of preparing:

1. Boiling broth, add the bay leaves, cumin, marjoram, allspice.
2. Peel, wash and cut vegetables. Add to the broth.
3. When the vegetables are soft, add them chopped cabbage.
4. Cut into small cubes of bacon. We fry it on a slow fire. When they shall rise greaves add them to the broth (leave the pan rendered fat).
5. Cut into small pieces the onion and fry it in fat of the bacon. Add to the soup
6. Add the tomato puree to the soup.
7. When the soup is ready, you can season it with salt and pepper.

Pierogi
(the dumplings)

Ingredients:

The dough:

1/2 kg of of wheat flour
200 ml of slightly warm water

Stuffing:

1 large onion or 2 smaller
300 g sauerkraut
300 g mushrooms
salt, pepper, allspice, bay leaf, oil

A method of preparing:

Stuffing:

1. cabbage squeeze the excess of juice, chop and put into the pot. Add water to the height of the cabbage, add bay leaf, allspice and a pinch of salt, bring to a boil and cook, covered, until tender (approx. 20 minutes). Drain the water, cool cabbage.
2. The oil fry the onion. Peel mushrooms, cut into small pieces and add to the onions. Season with salt, pepper, cover and fry together (approx. 10 minutes).

The dough:

Sift the flour and slowly add warm water, regular crimping cake. The finished product can not stick our hands. Salad with sauerkraut

Salad with sauerkraut:

300 g sauerkraut
1 onion
2 sweet apples
2 medium carrots
salt, ground black pepper
1 teaspoon sugar
3-4 tablespoons olive oil

A method of preparing:

Sauerkraut carefully squeeze the excess juice and chop finely. Carrot and apple peel and grate on the coarse mesh. Onion cut into small cubes. To bowl to translate all the ingredients and season to taste with salt, pepper and sugar, pour olive oil and mix.

Salad with pickled cucumbers

Ingredients:

4 - 5 large pickles
1 medium onion, chopped
1/2 bunch of chives
3 tablespoons of oil pepper

A method of preparing:

Cucumbers cut into half-slices. Onions and chives finely chop. All the ingredients thrown into a salad bowl, add the oil and mix. Season with pepper only. Do not add salt because pickled cucumbers contain a salt. Salad stand for an hour.

Salad with beets

Ingredients:

300g grated beets
1 onion
3 tablespoons of oil

pepper, salt

A method of preparing:

Beets strain. Onions cut into cubes, season with salt and leave in a bowl. After 10 minutes, add the beets to bowl with onions. Stir, add the pepper and the oil.
